Ingredients
For crust
- 2 c.
all-purpose flour
- 1 tbsp.
poppy seeds
- 1 tbsp.
grated lemon or Meyer lemon zest
- 1/4 tsp.
kosher salt
- 1 c.
(2 sticks) unsalted butter, at room temp
- 1/2 c.
granulated sugar
For filling
- 1 1/2 c.
granulated sugar
- 1/2 c.
all-purpose flour
- 3 tbsp.
cornstarch
- 1/2 tsp.
kosher salt
- 4
large eggs plus 4 egg yolks
- 1 tbsp.
grated lemon or Meyer lemon zest plus 1¼ cups lemon or Meyer lemon juice
For decorating
Confectioners’ sugar
Store-bought candied lemon slices (optional)
Directions
- Step 1Make crust: Heat oven to 350°F. Line 9- by 13-inch baking pan with foil, leaving overhang on 2 long sides. In large bowl, whisk together flour, poppy seeds, lemon zest, and salt.
- Step 2Using electric mixer on medium-high, beat butter and granulated sugar until light and fluffy, 3 minutes. Reduce speed to low, gradually add flour mixture, and mix until just incorporated. Press or spread into bottom of prepared pan. Bake until light golden brown, 15 to 20 minutes.
- Step 3Meanwhile, make filling: In large bowl, whisk together granulated sugar, flour, cornstarch, and salt. Add eggs and egg yolks and lemon zest and juice, then whisk to combine. Spread over crust and bake until set, 25 to 35 minutes. Let cool
to room temperature, then refrigerate until chilled, at least 3 hours and up to overnight. - Step 4Meanwhile, prepare decorations: Cut out emoji stencils (see womansday.com/downloads). Using foil overhang, transfer lemon bar to cutting board. Cut into 24 squares and top each with stencil. Dust with confectioners’ sugar, then carefully remove stencils and serve immediately, topped with candied lemon slices if desired.
