Ingredients
- 3 tbsp. fresh lemon juice
- 1 tsp. honey
- 1 tbsp. plus 1 tsp olive oil
- Kosher salt
- Pepper
- 1 bulb fennel, cored and thinly sliced
- 1 large red pepper, thinly sliced
- 1 small red onion, thinly sliced
- 4 Italian sausage patties
- 4 sesame buns, toasted
- Whole-grain mustard and mixed green salad, for serving
Directions
- Step 1In a large bowl, whisk together lemon juice, honey, 1 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Add fennel, red pepper, and onion and toss to combine. Let sit, tossing occasionally, at least 15 minutes.
- Step 2Meanwhile, heat a grill pan on medium. Rub sausage patties with remaining 1 teaspoon oil, then grill until just cooked through, 4 to 5 minutes per side.
- Step 3Spread buns with mustard if desired, then top with sausage and marinated peppers. Serve with a green salad if desired.
